Our shop features three different sized self watered trays. We also use three types of grow media (organic compressed coir, eco friendly bamboo fiber or our new jute grow mats). The three trays are approximately:
v1 original trays are 7.5"x5.75" and provide 35 sq in of growing area w 1" depth
NEW! v2 premium line is 8.75"x6" and is 25% larger with a media depth of 1 3/4"
v3 personal trays are 5.5"x4" are 50% smaller with 7/8" of media depth
New premium trays feature higher quality food quality plastic that is significantly easier to clean and reuse. These new trays are included in our new restaurant and small production kits which provides the ability for smaller kitchens to feature Tray to Table Nutrition!

Taking Fresh and Seasonal dining to a new level, 62 MarcKet St in Wailuku, Maui features our live microgreen trays not only on the menu but also in their window on Market Street.
Executive Chef Marc McDowell, formerly of Haliimaile General Store and the Makena Resort here on Maui, has been using our microgreens on his new menu highlighting seasonal produce and dishes prepared with a wealth of ingredients grown and produced locally.

Our new 100% organic and sustainable bamboo fiber microgreen grow pads are an industry first. Eco choice for grow material and ultra clean and compostable, our new bamboo grow mats are easy to grow and clean. Featured in our hydroponic kits and available to substitute on any of our kits.
Bamboo fiber grow pads are the top of the line hydroponic grow medium for microgreens. These pads have a high water holding capacity compared to most other grow pads, holding up to 10x it's weight in water. They are naturally biodegradable and can be composted taking about 3 months to break down completely. Eco-friendly, sustainable and food grade safe. These pads are neutral and wont alter the taste of microgreens.

Beyond Supplements ... Microgreens Not Pills
It struck me when I made a recent trip to our local Costco. Lined up on my left where normally all the new and hot items were pallets and pallets of supplements that took up the entire wall leading into the store. I have never noticed that entire area devoted to just one type of product and that underscores the public infatuation with getting well with a “pill” rather than the way nature intended.
The entire global dietary supplements market is estimated to be $133 Billion … with a capital B! Recent research has continually debunked the ability of these supplements to deliver on their many claims, sometimes even on their ability to deliver their disclosed content to the body. The reasons are many, but the underlying idea is that when nature produces doses of vitamins and minerals, the body can easily absorb through consuming natural foods and bio-available nutrition.
One other real problem in this space is the lack of regulation and testing. The Food and Drug Administration doesn’t review dietary supplements for their safety or effectiveness. The purported health benefits and claims no matter how tantalizing and seemingly full of science backed evidence is also unregulated and often times unreliable.
“Let food by thy medicine” was great advice with historic roots that has proven over time to be the best advice to navigate these tantalizing claims. Eat a balanced diet of fruits and vegetables, move more, and bring wellness back into your life.
