As a followup to our last entry and the introduction of our new Petite Snap Greens from Calvin"s Peas, we prepared some quick snacks that showcased the possibilities of utilizing our wonderful new shoots. Crackers with some cream cheese with chives and the new Petite Snap Greens, visually stunning with a taste to match. As described on their website, "Selective breeding has inspired a delicate plant that is entirely edible and completely delectable. These leaves, shoots and stems are a lighter hue with fuller leaves and no spindly tendrils... Perfect for sweet and nutty garnishes, in salads or anywhere a pretty edible green with a snappy pea flavor can perk up the plate." We were particularly attracted to the old fashioned and loving attention to the breeding craft. As Dr Calvin Lanborn explains his creation of the modern snap pea, "By chance, I observed an off type pea "rogue" which had thicker pod wall flesh than normal. My first thought was that this thicker pod flesh would improve the quality of the snow pea pods. As I worked with it, all crosses with this "rogue" pea gave only round, plump pods--no wide, flat snow pea pods were ever found. And thus we had a new pea to enjoy – the sugar snap pea. And my fascination with the possibilities from the snap pea has continued ever since... I've been helped by many others along the way in the search for and the incorporation of other genetic traits into Sugar Snap Peas and more recently Snap Greens." We are now growing these wonderful new Snap Greens and introducing incredible edibles into our line of kits and fresh delivery to selected chefs here on Maui.
