When I first posted the pics of our Amaranth Squared kits immediate feedback was "how beautiful the colors looked" or "it looks like a work of art." We had started to create our contest offering but decided that we wanted to get as many participants as possible. So to this end, here are the new details to our contest open to all. Our contest will be open to all with the only requirement being the "art" be done with living microgreens. Not cut and arranged or any other plants, just microgreens planted in any sort of media. No limit to amount of entries or types of microgreens as we want to see what our readers can come up with. The contest will run till the end of August and we would like permission to post your pictures on our site. Contest will be judged by our staff and winners will be notified by email. There will be three winners chosen and each will get their choice of our new square inch garden kits and highlighting on the web as true Artists with Food ... Contest is now officially open, send your best pics to [email protected]

This is the first in a series of three new kits that will be unveiled and sold now on our web store. This is our Amaranths Squared Square Inch garden. Consisting of both red garnet amaranth and white leaf amaranth (chinese spinach). This photo was taken at 7 days from seed to photo. The red amaranth is a great source of Vit K while the white has more iron and calcium than normal spinach. The red actually has the taste of earthy beets. This new square inch garden not only has spectacular looks but is super nutritious.
This kit will go on sale later today for $15 for a 2 crop kit. It includes enough seeds and media to grow out two complete square inch gardens as pictured. You can let your creative juices flow and create a microgreen painting with your seeds. Submit your pictures of this kit and and we will award another square inch garden to the best submission. It only takes a week or so to see your finished product so order now and get going .... I thought I'd share a picture of part of our growing space to give you ideas on creating a unique Microgreen Farm. We have taken several store bought racks and converted them to hold our trays and kits. The smaller rack on the right is where we germinate our trays in standard seed trays. These trays when inverted create the dark environment needed to germinate the seeds. The larger rack is our window facing grow area with supplemental cfl lighting. The lighting is over the counter but have been chosen for high K rating to allow better growing action (6500K rated) which allows me to have a good amount of grow time, normally 16hrs a day. Seeds and supplies are stored under this area and along the far wall where we have additional germinating areas since we have at our disposal another growing location should we need it. There is enough capacity in this little setup to grow enough for personal use and for our commercial accounts since deliveries are staggered during the week. Grow out times on most crops are in the 6-7 day area so this makes this an ideal scheduling system.
We will be showing in the next few days several new kits based on our square inch garden kit concept. The first pic was taken today of the garden we call the "Radish Patch" - picture today is the garden four days from initial seeding. This new kit is a mix or Red Arrow Radish, Red Stem Radish, Sango Radish, and White Stem Radish. The patch should be ready to go in a few more days ... stay tuned for more pics and kits ...
Just wanted to share our Square Inch garden before harvest. It has grown out for 10 full days from seed and the results are awesome, and equally delicious. Colors and textures were amazing and growth was really good in our wondersoil based kit. Red garnet amaranth, golden acre cabbage, giant mustard and thai basil in this first garden. We have planted out some new one featuring more amaranth, radishes, and a super food garden. There will be a 2 garden starter and 5 crop chefs kit offered next week with different crop configurations. We will have preorders available in a few days. Contact us for pre-release interest and options.
Instead of just enjoying looking at our new garden, I decided to make something with it ... check it out !!! I shaved some red cabbage and a green pepper to create a bed and topped with the red giant mustards and golden acre cabbage. Added on top was some tofu and cherry tomatoes. Topped with the red garnet amaranth to create one of the most nutrient dense salads imaginable ... the taste was as incredible as it looks ... we topped it off with some olive oil and ponzu dressing for the final touch to a perfect summer super salad ...
We started out thinking about this and researched growing in small containers and decided this might work with our microgreen kits. Taking the idea of multi-crops in a container and melding it into our kits, we have come up with Square Inch Microgreen Garden Kits ... or SI Garden Kits. This is our first try at multi-crop containers. The final product is now 8 days old and we are starting to harvest these wonderful microgreens. Pictured also is the same tray at 4 days so you can see how these little guys mature quickly. Starting from the bottom left is red garnet amaranth, golden acre cabbage, red giant mustard and thai basil. Watch for an announcement shortly to unveil our new line of Square Inch Microgreen Garden kits ...
Our microgreen crops and techniques of growing continue to evolve, but I think we are almost at the limit of just how fast we can get a crop done. Check out our new champion crop ... this is a picture of red arrow radish microgreens at just a few hours shy of a week of growth. The crop is so dense and colorful I just had to show you this new favorite. Not only are the colors and growth intense, but the flavor of the radish mirrors it's looks ... great zing to anything you want to add this too. We are featuring this seed in our beginner kits now available in our store as it should provide almost instant gratification for first time farmers .... you can start to eat these with anywhere from 5-10 days of growing time !!!
