We are always trying new crops and tastes. Chef Marc at the new 62 MarcKet Cafe here in Wailuku asked for a crop that has a minty taste. While researching possible solutions, we came across a description of edible marigold microgreens that had minty overtones. The seeds are extremely expensive and appeared tough to grow but after several attempts we delivered our first trays of these really beautiful and tasty new microgreens. Stunning red stems and beautiful green leaves set this one off as a particularly tasty and appealing new crop for us.
